【Ikama-ryu Hocho-honoshiki of Gion Matsuri brief overview】

Ikama-ryu Hocho-honoshiki (生間流式庖丁) of Gion Matsuri Festival (祇園祭) is held every year on July 15th. In Ikama-ryu Hocho-honoshiki, the shikibocho of the Ikama-ryu school is dedicated inside Honden (Main Shrine). Dressed in eboshi (hat) and kariginu (hunting costume), the fish, birds and other ingredients are cooked on the manaita (cutting board) using only a hocho-to (knife) and mana-bashi (chopsticks), without directly touching them with hands, which is a source of defilement, and then arranges them in the shape of zuisho, which represents a congratulatory shape (kicho). By the way, mana-bashi (chopsticks) are long wooden or iron chopsticks with a pointed tip. Ikama-ryu Hocho-honoshiki is done in Honden (Main Shrine), so you cannot see it directly, you can only ask what it looks like.

★The Ikama-ryu school is a school of Japanese cuisine that has been handed down from the court cuisine, samurai cuisine, and yusoku cuisine. The Ikamaryu school originated from the Shijo-ryu Hocho-do founded by Fujiwara no Yamakage, the founder of the Kujo family, who was a court noble of the Heian period (794-1185). By the order of the 58th Emperor Koko, Fujiwara no Yamakage devised and prepared cooking methods and manners for the court cuisine, and was also called the god of cooking. The Ikama-ryu school was given the name “Ikuma” by Minamoto no Yoritomo, the 1st shogun of the Kamakura shogunate, during the Kamakura period (1185-1333), and later served the Ashikaga, Oda, and Toyotomi families. When the 108th Emperor Gomizunoo visited Nijo Castle in 1624, the Ikuma-ryu school was selected as the town’s chef along with the chefs of the Imperial Family and the Edo Shogunate, and served as the chef at Hachijo no miya (Katsura no miya) until the Meiji period (1868-1912). Konishi Shigeyoshi of Mankame-ro in Nishijin is the 29th generation of the Ikama-ryu school. Mankame-ro was founded in 1722 and has been awarded two stars in the Michelin Guide Kansai 2015.
★Honden (Important Cultural Property) was rebuilt in 1654 by Tokugawa Ietsuna, the 4th shogun of the Edo shogunate. Honden is about 400 tsubo and 15 meters high. Honden is modeled after the Shishinden of the Imperial Palace, and is said to be the Gion-zukuri (Yasaka-zukuri), with Honden and Haiden combined into one unique structure. Honden is said to have a deep well ryuketsu (dragon’s hole) underneath it, which is one of the seven wonders of Yasaka Shrine.
